Coordinating Every Part of Your Bakery Renovation

A bakery brings production and retail into the same space, so the kitchen, display cases, service counter and customer area need to work together from the start.

1BENMU plans the build around that relationship, coordinating the front of house with production requirements while designing and fabricating custom millwork around the actual layout, equipment and displays.

That planning carries through construction, fabrication and installation, keeping the customer-facing and production sides of the bakery connected as the project takes shape.

The result is a bakery that works efficiently behind the counter while creating a polished, welcoming space for customers.

Yes. 1BENMU details every piece of custom millwork through shop drawings before fabrication begins, covering display counters, service and cashier counters, wrap and takeout stations, bread shelving and storage cabinetry for packaging and dry goods.

These drawings set dimensions, materials and finishes before pieces are produced at our Scarborough shop, and account for oven, mixer and refrigeration clearances, display case dimensions and other equipment that affects the finished millwork. Where an architect or interior designer is involved, we review the shop drawings against their design before fabrication proceeds, so details get resolved on paper instead of on site, and the millwork reflects both the approved design and real bakery conditions.

Based on our completed food-service and related commercial projects, a bakery renovation typically takes 4–10 weeks of on-site construction, depending on the size, existing condition and scope of the project.

A smaller renovation focused on finishes, the retail counter and customer area or limited millwork may take 2–4 weeks, while a complete bakery build-out involving a production kitchen, ventilation, new plumbing, electrical, HVAC, washrooms and extensive millwork can take 2–4 months.

For example, an average-sized retail bakery or pastry shop with a service counter, display area and small baking area may take around 5–7 weeks of construction. A bakery café, patisserie with seating or production bakery with a full production kitchen may take around 8–12 weeks when much of the existing infrastructure can be retained. Projects involving major ventilation, plumbing, electrical or other building-system changes can extend beyond that range.

For projects starting before construction drawings and permits are complete, design development, architectural and engineering drawings, permits and pre-construction typically add 2–4 months before construction begins.

What affects the schedule:

  • Starting condition: Renovating an existing bakery is different from converting a retail, office or unfinished shell into a bakery.
  • Design stage: We can work from completed architectural drawings or coordinate the design, drawings and required documentation with our architectural partners.
  • Permits and approvals: When building permits, public health requirements or other approvals apply, we account for them before establishing the construction start date rather than treating approval time as part of the construction schedule.
  • Project scope: Production kitchens, ventilation, floor drains, plumbing, HVAC, electrical, accessibility work and structural changes all affect how much work needs to happen on site.
  • Equipment and materials: Owner-supplied items such as ovens, mixers, refrigeration and display cases, along with specialty finishes and other long-lead materials, can affect the schedule depending on availability and installation requirements.
  • Custom millwork: The amount and complexity of custom millwork affect the schedule, but our fully equipped in-house millwork shop, with CNC routers, edge banders, a spray booth and more, gives us the capacity to produce service counters, display shelving, retail fixtures and other millwork efficiently while renovation work progresses on site, instead of waiting for construction to finish.

Bakery construction and renovation costs in Toronto range from approximately $75 to $300+ per square foot. A 1,800 sq. ft. bakery, for example, could represent an investment of roughly $175,000 to $325,000+, depending on the scope and existing conditions.

Lighter bakery renovations and refreshes can fall toward the lower end of that range, while complete build-outs with a full production area and the additional electrical, gas, ventilation, plumbing or mechanical work that ovens and other commercial equipment require tend to fall toward the middle to upper part of the range. High-end bakeries with premium finishes and extensive custom millwork sit at the very top.

The cost depends on the size of the space, how much is dedicated to production versus retail, the equipment and utility requirements, the existing condition of the property, and how much of the project involves construction versus custom millwork. Refreshing a front counter and display shelving costs far less than a complete bakery build-out with a new production area, washrooms and finished retail floor. Larger spaces can also have a lower cost per square foot because fixed bakery construction costs are spread across more floor area.

1BENMU provides an estimate after the initial site review, with construction and custom millwork broken out separately, so you can see where the project costs are going before committing to the work.

1BENMU runs construction and custom millwork as one project, so you’re not managing two separate contracts. Our team develops the shop drawings alongside the construction plans, so display counters, service counters and storage are designed against real oven, mixer and refrigeration clearances instead of guessed dimensions.

Site work and fabrication run in parallel at our Scarborough shop, so millwork isn’t waiting on construction to finish first. If something on site changes, a moved wall, a relocated drain, an adjusted equipment line, our team resolves it directly instead of passing it between separate companies. That gives you tighter control over the final fit and finish, since the same 1BENMU team that built the space also built and installed the millwork inside it.

Both. 1BENMU takes on the complete interior renovation of a bakery, including construction, trade coordination, finishes and custom millwork, or a more focused millwork-only scope within an existing shop. A full project can include the production area, front counter, seating, storage and display areas, with construction and millwork carried through as one project.

If your bakery is already operating or another contractor is handling construction, we can focus purely on millwork: a new display counter, service counter, wrap station, bread shelving or storage cabinetry. The scope doesn’t need to be a full renovation to work with us.

Yes. 1BENMU measures the actual space and fabricates each piece at our Scarborough shop around real bakery conditions, rather than relying on standard cabinet dimensions. That matters in existing commercial units where walls aren’t square, columns interrupt the floor plan, or the pass-through between production and retail has to fit around ovens, mixers and refrigeration that are already in place.

We build display counters, service counters and storage cabinetry around architectural details that prefabricated units can’t accommodate. Because our team handles design, fabrication and installation together, site conditions get built into the shop drawings before production, so the millwork fits the bakery instead of the other way around.

Yes. 1BENMU can work from plans developed by your architect or interior designer and carry those details through construction, millwork fabrication and installation. For a bakery, this matters most for the display counters, service counter and pass-through between production and retail, since those elements need to line up precisely with the equipment, display cases and surrounding construction once installed.

Our team reviews the drawings against actual site conditions and resolves dimension, material or detail questions with the design team before fabrication rather than after cabinetry reaches the site. This lets your architect or designer stay focused on the overall design while 1BENMU handles the construction and fabrication needed to build it.

Yes. 1BENMU partners with experienced architects to handle the drawings, documentation and approvals required for bakery and pastry shop renovations and build-outs. Commercial bakery renovations must comply with the Ontario Building Code (OBC), applicable municipal fire and safety requirements, and local public health requirements for food premises.

Architectural and engineering coordination may be required when changing the production and retail layout, installing ovens and exhaust or make-up air, adding floor drains and plumbing for sinks and dishwashing, upgrading electrical for mixers and proofers, adding or removing walls, or converting a shell or retail unit into a bake shop. Our team coordinates the required architectural drawings, professional stamps, and mechanical, electrical, plumbing, fire and life-safety, and accessibility requirements. Requirements that depend on how your bakery operates are coordinated with your own consultants.

As for permits, requirements depend on the scope of the work. A building permit is commonly required when the work involves structural changes, relocated plumbing, ventilation or mechanical work for ovens and equipment, or changes to washrooms and accessibility features. Cosmetic work such as painting or replacing finishes may not.

1BENMU identifies permit requirements during the design stage and coordinates submissions and required inspections, so the project is properly documented and approved before and during construction.

1BENMU works with bakeries on both complete interior renovations and specialized custom millwork projects. A project can involve transforming an entire commercial space, or a focused scope such as display counters, wrap stations, retail shelving, pass-through counters and other architectural millwork. This allows us to work across a wide range of bakery businesses, including:

  • Retail and neighbourhood bakeries
  • Café bakeries and patisseries
  • Wholesale and production bakeries
  • Cake, dessert and specialty shops
  • Bagel, donut and bread shops
  • Franchise bakery locations
  • Bakery kiosks and takeaway counters

Each type of bakery changes the room mix and daily workflow, so the scope, layout and millwork are planned around how it runs.

Your bakery project gets a dedicated 1BENMU project manager who follows the work from planning through construction, millwork installation and final walkthrough, one point of contact for questions, scheduling and progress.

They coordinate site construction, required trades and the custom millwork being fabricated at our Scarborough shop, which matters when production equipment, display counters, seating and the service counter all need to land on the same schedule. We also run project-management software with AI-driven tracking to follow progress and flag issues before they affect the next stage, so you know where the project stands without chasing separate contractors for updates.
